Start by mixing together the sugar and corn syrup in the saucepan and heating it over medium heat. Use your candy thermometer to monitor the temperature, and continue to cook the mixture until it reaches around 300-310°F (149-154°C).
Once the mixture has reached the desired temperature, remove it from the heat and stir in your peppermint oil and food colouring. You can use any colour or flavor that you like, but traditional candy canes are typically red and white and flavoured with peppermint. Next, pour the mixture onto a greased surface, such as a silicone mat or a buttered baking sheet. Allow the candy to cool for a few minutes until it is cool enough to handle, then use your hands or a rolling pin to shape the candy into long, thin strips. Finally, use a pair of scissors to cut the strips into small, cane-shaped pieces. Allow the candy canes to cool completely on a sheet of parchment paper before storing them in an airtight container.
