I have modified the recipe a bit for what works for me, but it is a great recipe regardless. I have used this recipe several times now, I make 8 large buns out of this recipe, instead of the 15 small ones. Yeast Buns Recipe: Ingredients: - 1 cup water - 2 tablespoons melted butter -1/2 cup milk -2 tabelspoons honey -1 tablespoon active dry yeast -3 1/2 to 4 cups flour -1 teaspoon fine sea salt * Extra melted butter for brushing on top, is desired Instructions: * Bake at 400 F - Preheat oven when your last rise of the dough is nearly done * Combine water, melted butter, milk and honey - make sure that you warm them enough, similar to the temp of baby bath water. * Place your liquid mixture in a large bowl, sprinkle the yeast on top, I usually let it sit covered in a warm place for about 15 mins. Assume if it foams up, the yeast is good to go. * Start adding your flour and sea salt, I usually add at least 2 cups flour, mix it in and then add in the salt. Keep adding flour, usually up to about 3.5 cups until the dough feels good to work with. * Kneading, I usually end up kneading about 10 minutes, until my dough feels tacky, but not sticky. I know with my dough if it slightly adheres to the counter, but will pull away cleanly, not sticky residue left behind, she is good to go. * Once dough is ready, place in a lightly greased bowl and cover with a light lint free cloth, let rise until double in size, around 30 mins. * Risking could take longer dependent on warmth and so on, so keep an eye on it. I have a bread proofer on my oven so it goes fairly quickly for me. * Then divide dough into 8 large pieces or up to 16 smaller rolls, your choice. * Form buns, or rolls, place on cooking sheet, I line my baking sheet with parchment paper. * Cover buns once again and let rise until double in size, I find myself waiting around 45 mins to an hour. * Bake risen buns approximately 15 mins, dependent on size, keep an eye on them the first time you try this recipe, you will know the time needed for the next batch, unless you change the type of flour, I find different flours take more or less time.
